Cheesy Hash Brown and Ham Casserole

Ingredients:

  • 3 cups frozen hash browns
  • 3⁄4 cup shredded Monterey Jack pepper cheese
  • 1 cup cubed cooked ham
  • 1⁄4 cup green onion, finely chopped
  • 4 eggs, well beaten
  • 1 (12 ounce) can evaporated milk
  • 1⁄4 teaspoon black pepper
  • 1⁄2 teaspoon salt

Directions:

  1. Grease a 2-quart rectangular baking dish.
  2. Spread the frozen hash browns evenly on the bottom of the baking dish.
  3. Sprinkle the shredded Monterey Jack pepper cheese, cubed cooked ham, and chopped green onion over the hash browns.
  4. In a separate bowl, whisk together the well-beaten eggs, evaporated milk, black pepper, and salt until well combined.
  5. Pour the egg mixture over the potatoes, cheese, ham, and onions.
  6. Cover the baking dish and refrigerate overnight.
  7. When ready to bake, preheat the oven to 350°F (175°C).
  8. Bake the casserole for 40-50 minutes, or until set and golden brown on top.
  9. Let the casserole rest for 5 minutes before serving.
  10. Serve and enjoy this delicious and comforting breakfast or brunch dish!
