How to make traditional Irish beef and Guinness stew?
- Cut the beef into 1-inch pieces along the grain. Sprinkle with salt, pepper and flour and mix. Set aside
- Fry the bacon in a Dutch oven or heavy-bottomed pot until cooked through, then remove with a slotted spoon, leaving the bacon fat in the pot.
- Brown the beef thoroughly on all sides and cook in batches, being careful not to crowd the pieces. Place the meat on a plate and continue to do this until the meat is browned all over.
- Add onions and cook, adding oil as needed, for about 10 minutes or until just starting to brown. Add the garlic and fry for another minute. Add the vegetables and simmer for another 5 minutes.
- Add the Guinness and bring to a boil, scraping the bottom of the pot with the boiling liquid. Cook for 2 minutes.
- Return beef and bacon to pot and add remaining ingredients. Mix everything.
- (At this point, you can put everything in the slow cooker if you like. Follow the remaining steps and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Cook until cooked. Is required. Reduce heat, cover and simmer for 2 hours. Season with salt and pepper.
- Serve with crunchy Irish soda bread or country bread. This soup tastes even better the next day.
