Butternut Cookies Recipe

Butternut cookies are a timeless treat that embodies the comfort of homemade baking. These cookies are so light and fluffy that they melt in your mouth, with just the right amount of nutty flavor and sweetness to satisfy your sweet tooth.   • 1 cup (2 sticks) softened unsalted butter.
  • 1/2 cup powdered sugar.
  • 2 cups all-purpose flour.
  • 1 cup finely chopped walnuts.
  • Vanilla extract 1 tsp.
  • A pinch of salt.
  • Additional powdered sugar for rollout.
  • How to make butternut cookies:
  • In a mixing bowl, mix the butter and powdered sugar until light and fluffy. At this stage, air is added to the dough, giving it a soft texture.

The dough is refined with vanilla essence to give it a pleasant aroma and taste. Gradually add the all-purpose flour and a pinch of salt to the butter mixture. The ingredients must be mixed until a dough is formed.

Chop the walnuts or pecans very finely to give the cookies a delicate consistency. Carefully fold the coarsely chopped almonds into the batter, distributing it evenly.

Form the dough into a ball and cover with plastic wrap. Place the mixture in the refrigerator for 30 minutes. Cooling the mixture makes it easier to handle and prevents the cookies from expanding too much while baking.

Shape the chilled dough in portions into 2.5 cm diameter balls. The floury appearance of these cookies is achieved by rolling the dough chunks in powdered sugar.

Place the dough balls, including their casings, on a baking tray lined with baking paper and spread out, leaving space between the dough balls. Bake the butternut cookies in the preheated oven for 12 to 15 minutes or until the edges are lightly golden brown.

Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Once the butternut cookies have completely cooled, transfer them to an opaque container to preserve their delicate texture.
