Ingredients:
- 2 tablespoons olive oil
- 1/4 cup chopped shallots
- 2 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground black pepper
- 1 pound shrimp, peeled and deveined
- 1/2 cup white wine
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup grated Parmesan cheese
Instructions:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chopped shallots and minced garlic to the skillet and sauté for about 2 minutes until fragrant.
- Stir in the Cajun seasoning, cayenne pepper, and black pepper, and continue to cook for 1 minute to release their flavors.
- Add the peeled and deveined shrimp to the skillet and cook until they turn pink, approximately 2 minutes.
- Pour in the white wine and let it simmer until it reduces by half, about 3 minutes.
- Reduce the heat to low and stir in the butter, chopped parsley, and freshly squeezed lemon juice.
- Allow the mixture to simmer gently until the shrimp is fully cooked through.
- Sprinkle the grated Parmesan cheese over the shrimp and sauce, and stir until the cheese is melted and the sauce is well combined.
- Remove the skillet from the heat and serve the Cajun Shrimp Scampi immediately, garnished with additional parsley if desired. Enjoy!
