Cajun Shrimp Scampi Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1/4 cup chopped shallots
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground black pepper
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup white wine
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chopped shallots and minced garlic to the skillet and sauté for about 2 minutes until fragrant.
  3. Stir in the Cajun seasoning, cayenne pepper, and black pepper, and continue to cook for 1 minute to release their flavors.
  4. Add the peeled and deveined shrimp to the skillet and cook until they turn pink, approximately 2 minutes.
  5. Pour in the white wine and let it simmer until it reduces by half, about 3 minutes.
  6. Reduce the heat to low and stir in the butter, chopped parsley, and freshly squeezed lemon juice.
  7. Allow the mixture to simmer gently until the shrimp is fully cooked through.
  8. Sprinkle the grated Parmesan cheese over the shrimp and sauce, and stir until the cheese is melted and the sauce is well combined.
  9. Remove the skillet from the heat and serve the Cajun Shrimp Scampi immediately, garnished with additional parsley if desired. Enjoy!
