I tried the Mexican copycat Taco Bell pizza, but instead of making individual pizzas, I threw it in a baking dish. Everyone loved it and yes it tasted like Taco Bell
- Ingredients:
- 1.5 lbs ground beef
- 1 Taco Bell seasoning pack
- 1 large can of refried beans
- 1 large can of red enchilada sauce
- 10 cornmeal tortillas (separately)
- 1 large tomato, diced
- 1/4 medium onion, chopped
- 3 cups or more grated cheese
- Chopped green onion
- Brown meat. drain.
Directions:
Add the seasoning pack and reconstitute as directed (1/2 to 3/4 cup water, simmer until most liquid is absorbed) and set aside. Heat the beans in a pot or microwave. Use a small amount of vegetable oil to fry each tortilla. Place fried tortillas on the bottom of a baking dish. Layer the beans on top. Layer the seasoned meat on top. Pour half the can of enchilada sauce evenly over the top. Add another layer of tortillas. Pour the remaining half can of enchilada sauce evenly over the top. Scatter diced tomatoes and yellow onions on top.
Spread cheese on top. (Tomatoes and onions can be placed above or below this cheese layer). Bake until the cheese is melted and bubbles form around it. Approximately 20 minutes at 350℃. Once cooked, garnish with green onions. Let stand for 10 minutes before serving.
