Okay, I may not be Irish or Jewish – corned beef is common in both Jewish and Irish traditions – but I sure love eating it like I do! When I think of large family dinners, especially St. Paddy’s Day, I automatically think of corned beef and cabbage. Corned beef is a favorite of my family and I try to make it often. I especially enjoy making them in the Crock Pot because they’re easier, less complicated, and require less effort.

This is also a great addition to the crockpot early in the day to serve at large gatherings as you can clean the house and set the table when family and friends arrive . It also gives you the freedom to host and have fun with everyone and drink Guinness.

What is corned beef?

Corned beef is one way to describe a cooking technique commonly used with beef brisket. This technique involves preserving the beef by salting it. This method involves brining the beef in brine infused with various spices and slowly cooking it over low heat until the meat is very flavorful and tender.

When you purchase corned beef, it will likely come with a seasoning pack that includes bay leaves, peppercorns, and allspice. Some spice packs may contain ginger or cinnamon. Of course, these spices contain a lot of salt.

Why cook corned beef in the crockpot?

I’m a big fan of simple dishes made in the slow cooker. The traditional method of cooking corned beef on the stovetop is delicious and comforting, but the Crock Pot is much easier. Corned beef needs to be simmered over low heat for a long time, so it’s best to cook it in a slow cooker. Once set, you can keep working on it for hours or until it’s time to add the potatoes and carrots. Once you’re ready, cleanup is super easy and you’ll have the perfect meal.

Preparation: Place corned beef, fat side up, in slow cooker and season with seasoning pack. Then sprinkle with brown sugar, add garlic and beer.
Cook: Cover and cook on low heat for 4-5 hours.
Add: Remove lid and add carrots and potatoes. Cover and simmer for an additional 2 to 3 hours or until corned beef is tender.
Leftovers: Remove corned beef from slow cooker and place on cutting board. Let stand for 15 minutes before cutting. Next, slice the corned beef against the grain.
Serve: Garnish with parsley and add carrots and potatoes to the beef.

Tips for Making the Best Crockpot Corned Beef

If the corned beef isn’t browned or you want it a little more browned, place the corned beef under the oven broiler for a few minutes until it’s browned to your liking. .
To add more flavor and texture to corned beef, sauté the flavors in a hot skillet before adding to the slow cooker.
Add cabbage: For a more traditional recipe, add fresh chopped cabbage an hour before cooking the meat.
After cooking, let corned beef rest for 15 minutes before slicing. This will redistribute the juices and keep the meat juicy and tender.
Try to cut the beef along the grain to make it as tender as possible.

Plating Suggestions

I like corned beef with potatoes and carrots, but I also love corned beef with fried cabbage.
