Ultimate Chocolate Chip Oatmeal Cookies

Yield: 3 to 3½ dozen cookies

Ingredients:

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1½ cups (3 sticks) butter, at room temperature
  • 1½ cups granulated sugar
  • 1½ cups packed light-brown sugar
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 3 cups semisweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups unsweetened flake coconut
  • 2 cups chopped pecans (8 ounces)

Preparation:

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. In a mixing bowl, combine the flour, baking powder, baking soda, ground cinnamon, and salt.
  3. In a very large bowl, use an electric mixer to beat the butter at medium speed until smooth and creamy. Gradually beat in the granulated sugar and light-brown sugar until well combined.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Stir the flour mixture into the butter mixture until just combined.
  6. Fold in the semisweet chocolate chips, old-fashioned rolled oats, unsweetened flake coconut, and chopped pecans until evenly distributed.
  7. Drop ¼ cup of dough for each cookie onto ungreased baking sheets, spacing them 3 inches apart.
  8. Bake for 15 to 17 minutes, or until the edges are lightly browned, rotating the baking sheets halfway through baking.
  9. Remove the cookies from the oven and transfer them to wire racks to cool completely.
