GARLIC PARMESAN ROASTED POTATOES

Ingredients:

  • 3 pounds red potatoes, cut in half to ensure even cooking
  • 2 tablespoons rich olive oil
  • 5 garlic cloves, finely chopped
  • 1 teaspoon fragrant dried thyme
  • 1/2 teaspoon dried oregano for a little spiciness
  • 1/2 teaspoon dried basil
  • 1 finely grated Parmesan 3 cups
  • Kosher salt and freshly ground black pepper, to taste
  • 2 teaspoons unsalted butter (can be omitted for vegan version)
  • 2 teaspoons chopped fresh parsley leaves for garnish

Cooking Directions:

  1. Prepare the oven and baking tray. Preheat the oven to 200°C. Meanwhile, spray a baking sheet with nonstick spray or lightly grease the surface.
  2. Mix the potatoes: First, add the halved red potatoes to a large mixing bowl. To do this, add olive oil, then garlic, thyme, oregano, basil and the main ingredient – Parmesan cheese.
  3. Season: Add plenty of kosher salt and freshly ground black pepper to taste.
  4. Mix: Combine all ingredients in a bowl and mix until each potato half is evenly covered with the herb and cheese mixture.
  5. Arrange: Place seasoned potatoes, skin side up, on the prepared baking sheet. This creates a crispy texture.
  6. Bake immediately: Place the baking sheet in the preheated oven and bake for approximately 25-30 minutes. Remember to flip the potatoes halfway through to maintain an even golden color.
  7. Finishing touches: While the potatoes are roasting, melt the butter (on the stovetop or in the microwave if desired) and drizzle it over the roasted potatoes for extra flavor. If you’re hosting vegan guests, you can skip this step.
    8. Garnish and serve: Scatter freshly chopped parsley leaves over the roasted potatoes to add color and freshness.
